Yes, I don't see any reason why ...Hello, Beth. Yes, I don't see any reason why you can't proof them overnight in the refrigerator. Shape them into buns, then cover and store in the refrigerator. The next morning, take the buns out of the refrigerator and let them sit at room temperature while you preheat the oven. Bake as directed in the recipe.<br /><br />I've never done the freezing bit, but I would think you would take the frozen buns and place them in the refrigerator overnight. Then do as explained in the above paragraph.<br /><br />Hope this helps and you enjoy them as much as I did.
